Jose Gallegos
Executive Chef Jose Gallegos hails from Ecuador and studied the art of cuisine in Europe and South America prior to settling in California. With over 20 years of experience, he has prepared elaborate banquets at resorts in Palm Springs and Ecuador as well as fine dining in a variety of intimate settings. His influence is evident throughout Formaggio. Under his leadership, the culinary staff at Formaggio prepares exceptional Cal-Italian cuisine utilizing the best fresh local products available. The creative menu includes a wide variety of items including pizza, lasagna, and chicken cacciatore along with some new favorites such as stuffed Portobello appetizer and pan sautéed sea bass.
